Creme de Menthe
Serve as an after dinner drink in fancy glasses, or add to chocolate sauce or over ice cream. Yield 3 cups.
- 2 cups vodka
- 1 cup light corn syrup
- 1/2 tsp peppermint extract
- 40 drops green food coloring
Pour the vodka into a sterilized quart jar. Add all the other ingredients. Cover and shake to mix.
Coffee Liqueur
The cheap alternative to Kahlua! Add to your coffee, pour over ice cream, just serve as an after dinner drink.
- 1 1/2 cups powdered instant coffee
- 3 cups boiling water
- 6 cups sugar
- 1 vanilla bean
- 1 bottle (750 milliliters) vodka
Dissolve the instant coffee in the water in a large saucepan. Add sugar and vanilla bean and simmer over a low heat, stirring constantly until it becomes syrupy.
Remove from heat, allow to cool, then stir in the vodka.
Pour mixture into a gallon container (glass or earthenware). Cover tightly and let stand for at least 30 days. Yield about 2 quarts. Raspberry Liqueur
Great served over ice cream! Yield about 3 cups.
- 3/4 cup sugar
- 1/2 cup water
- 2 cups fresh raspberries (or 1 - 12 oz pkg frozen, dry-packed)
- 2-3 narrow strips lemon peel
- 1/2 vanilla bean
- 1 tsp lemon juice
- 1 1/2 cup vodka
In a medium saucepan, combine sugar, water, raspberries, and lemon peel. Split and add the vanilla bean. Cook over a low heat until the sugar dissolves.
Increase heat and bring to a boil - boil for 3 minutes, then cover and reduce heat to low. Simmer for 30 minutes.
Strain through a piece of cheesecloth, discard lemon peel and vanilla bean.
Stir in the lemon juice and vodka. Pour entire mixture into a bottle or jar and cover tightly. Best served chilled or at room temperature - will keep about a month if refrigerated. |
