You will need:
- 1 1/2 cups bran
- 1 tsp. baking soda
- 1 cup buttermilk (1 cup milk with 1 tbsp. lemon juice may be substituted for buttermilk)
- 1 tsp. baking powder
- 1/3 cup veg. oil
- 1/2 tsp. salt
- 1 egg
- 1/2 cup raisins or dates
- 2/3 cup brown sugar
- 1/2 tsp. vanilla
- 1 cup flour
Preheat oven to 375 degrees. Mix together bran & buttermilk. Let stand.
Combine oil, egg, sugar and vanilla. Add to bran mixture.
Sift together flour, baking powder, baking soda and salt. Add to first mixture and stir until just blended. Add raisins and spoon into prepared muffin pans.
Bake 15-20 minutes. Makes about 12 muffins. One of these and a couple pieces of fruit make for a very nutritious breakfast!
