You will need:
- 4 cups frozen French cut green beans
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 small onion
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon oregano
- 8 ounces tomato sauce
- 2 eggs, slightly beaten
- 1 1/2 cups nonfat cottage cheese
- 2 green onions including tops, minced
- 1/4 grated Parmesan cheese
Cook green beans until tender crisp.
Preheat oven to 350F.
Heat oil, brown meat and add garlic and onion. Saute until soft. Add tomato sauce, salt, cinnamon and oregano. Simmer 10 minutes.
Place green beans in the bottom of a 10x6x2 baking dish. Spread meat mixture on top. Combine eggs, cottage cheese and green onion. Spoon over meat mixture. Sprinkle with parmesean cheese. Bake for 40 minutes. Serve hot.
