Ingredients:
- 1 lb. boneless skinless chicken breasts (tofu for vegetarians)
- about 1/2 cup bottled Hoisin sauce
- 2 green peppers
- 1 large onion
- about 1/2 package of flour tortillas, small or large
- 1 tbsp. oil
Method: Cut chicken into bite sized pieces. Marinate (in the fridge) in the Hoisin sauce for awhile (an hour is fine). Slice the onion and peppers into long pieces. Stir-fry the vegetables in the oil (some mushrooms would go well too), about 4 minutes. Remove to a bowl. In the same pan, stir-fry
the chicken with any remaining sauce, about 4 minutes. (You can warm the tortillas by wrapping in foil and putting in a warm oven.) Add the chicken to the vegetables and let everyone wrap their own.
