Ingredients:
- 2 cloves of garlic
- sprinkling of salt
- 1 egg
- 2-3 anchovies
- 1 tsp dry mustard
- 2 tbsp lemon juice
- 2 squirts tobasco sauce
- 3 tbsp olive oil
- 2-3 bunches romaine lettuce
- Grated parmesan cheese
Crush 2 cloves of garlic and rub them on the inside of a large wooden salad bowl. Sprinkle salt in bowl. Boil the egg for 1 minute, then break it into the bowl. Add 2 or 3 anchovies - crush anchovies with a fork, mixing them with the egg.
Add dry mustard, lemon juice and tabasco sauce. Stir until all the salt is dissolved.
Add olive oil. Stir with a wooden spoon until all the liquid is blended.
Wash and dry romain lettuce. Tear into pieces and add to salad bowl. Toss gently. Sprinkle with parmesan cheese. Add croutons and extra anchovies if desired.
