Ingredients:
*6 egg yolks
*Double boiler, copper pot on top of lg sauce pan will do
*3/4 cup butter
*Juice of 1 lemon
*1/2 tsp salt
*1 tsp Worcestershire sauce
*2 squirts tabasco sauce Separate egg yolks and set aside.
Heat water in double boiler to hot but not boiling.
Melt 1/2 cup of butter in copper pot or top of double boiler.
Add egg yolks and 3 tbsp cold water.
Beat with wire whisk until fluffy.
Add 1/4 cup melted butter, lemon juice, salt, Worcestershire sauce and tabasco sauce.
Don't boil. Stir until thick and serve immediately.
If sauce becomes too thick, stir in small amounts of hot water. Serving ideas: over eggs (traditional Eggs Benedict), asparagus, caulif, broccoli, crepes filled with meat & vegetables, hot open-faced chicken, turkey or ham sandwiches, potatoes, omelettes or scrambled eggs.... use your imagination!
