Chocolate Muffins |
Ingredients:
- 6 ounces chocolate (choose milk chocolate or semi-sweet chocolate)
- 1/3 cup butter
- 3/4 cup buttermilk
- 1/2 cup sugar
- 1 egg
- 1 1/2 tsp vanilla
- 1 2/3 cups flour
- 1 tsp baking soda
Method:
- Preheat oven to 400 degrees F.
- Spray a muffin pan with spray oil or line with paper liners.
- Melt chocolate and butter in the microwave or in a small pan over very low heat.
- Set aside to cool for 10 minutes.
- With a fork, lightly beat the egg.
- Combine the cooled chocolate and butter with the egg, buttermilk, sugar and vanila in a small bowl. Beat until well blended.
- Sift flour and soda together in a large bowl.
- Make a well in teh center of the flour and pour the wet mixture into the well.
- Mix until just combined. Do not overmix.
- Spoon batter into muffin tins, fill each cup 2/3 full.
- Bake for 20 to 25 minutes.
- Remove from over and let stand 10 minutes. Remove from pans and cool completely on wire racks.
- If desired you can add 1/2 cup chocolate chips or chopped nuts to the batter just before spooning into the pan.
