Orange Loaf Glazed with Marmalade |
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butter
- 1 cup white sugar
- 2 eggs
- grated rind from one orange
- 1/2 cup fresh orange juice
- 1/2 cup marmalade
Method:
- Spray a 9" x 5" x 3" loaf pan with spray oil.
- Preheat oven to 350 degrees F.
- Sift flour, baking powder and salt together in a bowl.
- Using a mixer, cream butter 1 cup of sugar together until light.
- Add eggs one at a time, beat after each addition.
- Add orange rind and 1/2 cup juice.
- Add flour mixture and stir until just combined. Do not over mix.
- Pour batter into prepared pan.
- Bake for 1 hour, or until done.
- Remove loaf from oven and immediately spread marmalade over the top of the loaf.
- Cool 10 minutes, then remove loaf from pan and place on wire rack to cool.
- Serve with marmalade butter: whip 1/2 cup butter until light, then whip in 1/8 cup marmalade.
